Scottish butterscotch pots

Ingredients
- 100ml sweetened condensed milk
- 3 medium egg yolks
- 375ml double cream plus extra to serve
- Dark chocolate, to serve

What you need to do
- Pre heat oven to 150c (gas mark 2)

- Pour condensed milk into a heavy pan and gently bring to the boil.

- Simmer for 15-20 mins until fudge like

- Spoon fudge into a bowl, stir in egg yolks and then gradually stir in cream until smooth

- Strain into a jug then pour into 3 inch ramekins

- Put ramekins on a roasting tin and pour in boiling water till it comes halfway up the dishes

- Cook for 20-25 mins until set

- Allow to cool then cover an chill for two hours

- Serve with double cream and chocolate shavings
